Observations

The ´must´ or grape juice originates from our vineyard in the renowned Macharnudo area of Jerez, and is fermented in stainless steel before being aged under a veil of ´flor´ yeasts for more than eight years. Further maturing, allowing oxidation maturation of the wine allows oxidation to take place for at least another eight years before bottling. The Sherry Council guarantees the wine has a minimum average age of over 15 years. The result is a complex amber coloured wine, dry, ample full bodied and well balanced to on the palate, it is very complex to on the nose with clear distinct hints of hazelnut. It is a very pleasant delightful aperitif and can accompany meat and game dishes to perfection. To It should be served slightly chilled.
